i've only ever made berry preserves but i recommend jeanne lesem's book "preserving today"

I've made the fruit purees out of the Cake Bible with excellent results. I'd like to get adventurous and try some other fruits, though, such as mango, pear, and apple. Do you recommend adding lemon juice and cooking all of these down to concentrate the flavors? I am accustomed to using commercial frozen purees but am trying to cut costs and freezer space (since I can make smaller amounts!).
