Storing Fresh Ginger

Rosalie Question:
I have a piece of fresh ginger and would like to store it for awhile. Seem to me I read that one can put it in sherry, maybe, or water - I can't remember. Do you know? Thank you in advance for your reply.

i hate to tell you how old my ginger in sherry is—maybe 15 years!!! and it’s still fine. i’ve stored it in the frig. but these days i simply freeze any left-over. it freezes very well.

can i freeze fresh ginger?

you can use candied ginger but fresh ginger has a lot of moisture so it will make the cookies more puffy.
dried herbs and spices are always much more concentrated and intense than fresh. the rule of thumb is to use about 3 times fresh to that of dry.

Can I use fresh ginger instead of dry when I bake cookies? If so, do I use the same amount as dry?

Another way to store ginger if you don't want the sherry taste is to wrap the cut piece in a VERY slightly dampened paper towel [barely moist to the touch], then in a cloth napkin and store it in the fridge.

I store in peeled in a sandwiched bag inside the freezer for monthes, then i thow it before i use it. works fine for me.
