Bread Ovens

MONICA QUESTION
Feedback: Hi Rose! Do you have any recommendations on bread ovens? I am looking into buying a separate oven just for baking bread (and if it had steam injectors, I'd be thrilled!) Have you looked into any of the products that are out there?
ROSE REPLY
i haven't actually tried it yet but kitchen aid has a new built in oven with "steam assist" that sounds very promising! it's projected to come out in 2007. meantime it has a duel-fuel range with steam assist.

i hope someone out there in blog land has had experience with these ovens as crystal is right to question how well they work. i always like to try an oven before making such a big committment of purchasing and installing it.

Miele has launched a new spray-misting oven:

Gaggenau has had one for a few yrs.

Both models not available for testing in Singapore where I live.
I wld love to be able to make "real" baguettes. But I wonder if the spray mist function really makes a lot of difference. I was told that de detrich is a good oven (at half the price or less) for general baking (no spray misting) http://www.rinaelectrical.com.sg/product_tpl_desc.asp?pId=109.

Can you recommend the best commercial oven for pastry baking in your opinion?
