Barcelona Brownies

Dear Levy,
I am a spanish woman (from Barcelona) and I read that you made a brownie called Barcelona. ¿Is it truth?. I want, if it is possible a recipt of this brownie. I can't find it in your website. Thank you in advance and sorry for my bad english.

you need to chose a recipe that is described as fudgy brownie and there are many. check out lisa yockelson's book chocolate chocolate.
for a shiny top you need a high amount of sugar. corn syrup might help but to my taste the excess sweetness is undesirable and i'd rather give up the shine for the right flavor!

Since you're on the topic of brownies I wanted to ask about mine. When ever I make them they seem to come out more cake-like, and I love dense, moist, fudgy brownies. What am I doing wrong? Could I be over mixing or adding too much baking powder? Also I noticed that box brownie mixes always have this small shiny crust that forms on the top after baking. How do they achieve that? Could corn suryp produce that? I have seen brownie recipes where they do use it, but I have not tried them yet.

Dear Rose, I thank you for your elightment....I have little question, since when do brownies have cream cheese?? I checked Wikipedia, and it talks about peanut butter varieties, nuts etc....but cream cheese? and by the way how thoughtful of you to invent a recipe for a place where you´re been only 2 days promoting your book...I´m not American, but I do know 3 who have actually invested money here and have tought Spanish people what traditional brownies really are, you should check them out next time!

I said the best brownies of Barcelona can be found in Born Cooking in Borne area. And the cookies are the best too.
