sorry, i got confused, i thought cuisipro makes a scale shaped like a measuring spoon.

i am uncertain how the cuisipro weighing measuring spoon can be accurate. physics say that a scale needs to be sitting on a flat surface and still for accuracy?

I hope you don't throw away your meassuring spoons, specially if yours are "relativelly speaking" accurate!

The ones I'm going to throw away are *way* off. A tablespoon of sugar weighs about 9 grams in that one, but using the Cuispro, it's about 12.5 grams. That's like 30% error, about equal to a teaspoon.

I do *love* the stainless steel spoons, though. The plastic ones end up on the bottom of the dishwasher and have been known to melt.

Great and resourcefull info. Thx for sharing. Cake Bible has weights for everything. I also weight everything, including using my O.1 and 0.01 gr scales for minute qtys like tsp fractions.

When I bake in large scale, I weight everything, but when making a single layer cake, I prefer to use my measuring spoons when measuring tsp fractions for vanilla, essences, baking powder, creme of tartar, and salt. One exeption is yeast, which is best to weight to the minute.

In all cases, anything larger than a couple of tbsps, I weight.

I hope you don't throw away your meassuring spoons, specially if yours are "relativelly speaking" accurate!

greg, you're absolutely right. i have one of those little beakers and they are super accurate. i find it matters more for solids such as baking powder and yeast when measuring spoons are off and recommend always using the same ones if you have more than one set and if the author doesn't say which he or she is using one finds out pretty quickly if they are larger or smaller than the one in hand and can make future adjustments.

when it comes to liquids however, i find that in almost all cases the variance of measuring spoons won't significantly effect the results or even be noticeable.

Well, I use a calibrated shot glass (sometimes). :-) The goal is to have the meniscus level with the calibration lines.

Cooks Illustrated did a number of tests and showed a great deal of error when you used measuring instruments intended for *dry* ingredients to measure *wet* ingredients. Whether this matters much with small measurements with teaspoons, I don't know. I would assume a little less or a little more vanilla isn't going to hurt anything.

In the end, all that matters is that you and I are measuring the same way and there's no way to guarantee that if you aren't using weights. I have a high precision scale that measures to 1/100 of a gram that I used for small measures, if the cookbook writer provides that for small quantities. Peter Reinhart does, but it's not that common.

I just tested my Cuispro measuring spoons with water. One tablespoon weighted 15.5 grams; ideally, a full spoon of water should weight 15 grams, so this is an error of 3%. I don't know how much of this error is due to it being liquid and how much is due to the spoon. The very nice stainless steel spoons I got from Bed Bath and Beyond have much more error and I'm going to have to throw away all three sets. (I always buy multiple sets, remove them from the chains, and then group them by size.)

But I will return to my above point. All this accuracy is a bit moot, because you never know how the cookbook writer is measuring his/her ingredients, which is why weight is the way to go. Any cookbook that doesn't provide them immediately loses two stars in my Amazon review. :-)

these are tested with accuracy according to how many volume milliliters of liquid each holds. for example, the 1 tablespoon holds 15.00 ml, the 1/2 tsp holds 2.50 ml, the 1/4 holds 1.25 ml and so on.

Regarding the paddle attachment, it's a good and needed idea, but I'm awaiting the approval of the mixture manufacturers before I pass judgment.

Amy, the original set/sale is now on ebay for $29.99 thru Alex, Randy's nephew. This set is been discontinued with slight modifications.

New features are handles on the beakers, clip-on measuring spoons, and many more sizes for the bowls, beakers, and spoons!

I can't wait for Randy to announce a new deal!

A set that includes the spoons, beaker, six-, eight- or even the 12-cup bowls, would be perfect. I ordered the 12-cup bowl and have found it to be very useful for big jobs.
Also, what is your evaluation of the paddle attachment that is avaiable through his site?

Randy, what is the current offer buying direct from you? I've had a chance to see the bowls at Williams Sonoma yesterday, and they look fantastic. It was marked down for $19, set of 2 larger bowls.

The offer on QVC did not include the 2 cup Beaker. The beaker sells for $10.00, so it was actually $2.00 moore on QVC.

I took Rose's advice and ordered these spoons, though I would like to have all the products at some point. He was prompt about mailing them to me, considering I'm on the east coast and he's in AZ. I like their design and the fact that the plastic is very sturdy, not flimsy. I'm determined not to let my kids swipe them for their play kitchen!

I also ordered the digital thermometer some time ago that Rose wrote about here. It's fantastic, the best one I've ever had.

I made the No-Knead bread once again this past week. Due to time constaints on my schedule the dough rested at least 52 hours, 24 in the refrigerator and 24 or so out. In my cup and one half water I whisked about one quarter of honey for a total of one and one half liquid. It was the densest best tasting bread I have made. This was about my 5th attempt. None were failures, but this was the best by far. These were my only deviations from the original recipe.
