Betsy's & Alex's Wedding Cake

Rose,

My fiance and I heeded your sage advice and went with a three, instead of four, tiered cake. Chocolate butter cake filled with orange mousseline buttercream and chocolate ganache and frosted with the orange buttercream. It turned out great, even though we baked, filled and frosted on a 90 plus degree day in a kitchen without air conditioning. I've attached a photo. Thank you for your wonderful recipes and helpful tips.

thks Patrincia n Elicia for being so nice to me. yeah, i love to bake and decorate but previously couldn't manage much time and mood(jokes apart, my career had been of a judge of criminal cases). but now i'm in a long leave and my only daughter loves "cream cakes" very much. the ultimate result: i'm hooked! i nervously think i can share some "discoveries" from my baking n decorating experience(!);-)

Hi Nushera, Welcome too! I call this my baking 'support group'! Not many of my friends share my enthusiasm for baking technicalities, only eating them - so its just wonderful to blog here and share ideas, tips and queries! Most of all, it's just wonderful that Rose answers our queries all the time too!

i've been enjoying this blog for a couple of months and now persons behind the names hector, patrincia, elicia, rozanne...seems to be so familiar! and ROSE... u simply got me spellbound. even here in australia, even the local baking- experts nd cook-books (let alone a novice like me) owe u a lot. long live Guru!

thanks so much patrincia--good advice--i'm frantic getting ready to leave for 2 weeks. but just want to add that i do say in the book that this fondant does NOT drape. the way i use it is in sections, i.e. a separate disc for the top and 'belt' around the sides.

Dear underground - Welcome!

I just wanted to let you know Rose gets all postings regardless of which thread they are posted on, so no worries about where you should post your question.

I'm sorry I don't have any experience with chocolate fondant, so I can only guess... It sounds like your fondant has dried out too much - have you added any shortening? You might try adding some to a small sample to see if that helps. Another thing I've heard about is heating for a few moments in the microwave.

Also, try the search box at the top left side of this page? It's very possible someone in the past might have posted a similar question or answer.

Lovely cake photo.
I've not been here before, but happy to have discovered the "Rose" blog.
After years of using your book I have never really had any problems that couldn't be solved with a little imagination.
But, I am having problems with the chocolate fondant. I'm not sure where you want me to post my question, here?
Of course I am in the middle of everything, so I will just mention that it crumbles and cracks everytime I drap it over my "practice run" tin. The tin doesn't have butter cream on it - will the icing serve as a buffer so that the fondant won't crack when I get to the actual cake?
I have already added water to the fondant...could it need more?

I am an admirer of Betsy and Alex's wedding cake expertise and regret that I didn't get to taste the cake. I have been baking for fifty years and for much of that time, have been a follower of Rose.
To Hannah and Sam: no apologies necessary.

Oh yes! I love the angle of the photo too. Was it taken by the photographer, or someone else?

I LOVE THE CAKE, those little dimples on the frosting makes it look more delicious, honestly. Hope you had a chance to inform the reception's guests what flavors were in the cake. YUM YUM YUM.

The photo looks beautifully taken, love the angle of the viewfinder and that industrial background.

Congratulations Betsy and Alex! Great job on the cake. I love the flowers. It looks wonderful and I'm sure it tasted even better, after all it was one of Rose's recipes.

Thanks Rose for posting our cake, and thanks Patrincia and Melinda for the nice comments. The tiers were 12", 9", and 6", but we also had two extra 12" cakes for serving. The cake served about 175, which included about 20 kids. We still had lots of extra cake, and people had seconds, so we probably could have gotten away with only one extra 12" cake.

Your cake looks beautiful. I like the fresh flowers too. And we know it tasted good too if it was a Rose cake! You were so brave to to do this yourself and in the heat! But every wedding cake involves a few blood, sweat and tears in it's evolution!
Well done and congratulations Mrs!
