A Few of My Favorite Silicone Things
It has taken several years, but such is the superiority of silicone in many applications of baking and cooking, the consumers have reached a real comfort level in near record time it usually takes to accept new technology. I would bet that there is at least one silicone product in every kitchen in America. I don’t think anyone still uses rubber spatulas rather than silicone spatulas that are heatproof to over 500˚F.
Through using silicone bakeware and cookware, and learning its properties and how it functions, manufacturers and designers are coming up with all manner of incredibly inventive gadgets that show silicone to its best advantage and that serve as indisputable replacements for old technology.

Silicone is great for a lot of things, but I find it a little "sticky" for hearth breads. I have to throw in a word for one of my favorite products: Super Parchment. Costs around $7-9 a sheet and lasts practically forever if you do one thing. It comes folded, but if you store it that way the creases will eventually wear through. I use a nice cardboard tube that came with a bottle of fine olive oil to store several sheets rolled--no creases, no ripping.

I'm interested in purchasing the cake strips, as well.
Amazon.com has a HUGE selection of silicone baking items, including both Silpat and Exopat mats.

I would be also interested in purchasing the cake strips. I avoid using the strips that I have because it isn't easy to pin and it just doesn't seem worth the effort of wetting and etc.

i'll have to do a little research as to what company that carries the cake strips would mail order abroad. i'll get back to you. i wonder if amazon doesn't have silpat and i know they sell internationally.

Love your articles. They are both inspiring and educational. I live in Scotland...do you know where I can purchase the silicone products mentioned. I have looked high and low for a silpat and can't find one.
