You're Not Going to Believe This!

I just returned from the French Culinary Institute where I was one of the judges for the graduating pastry class. I started speaking to one of the other judges who is the pastry chef at the terrific restaurant Aquavit in NY. I asked her where she was from and she said Sweden. So I started telling her about the bread posted below and she got really excited because she worked in that bakery!

I'm going to be retesting my version this Monday to make for my dentist who is a major bread lover. I've never brought him a loaf of bread before because he's 3 1/2 miles uptown and I always walk but carrying 1 1/4 pounds is not a big sacrifice when it's this wonderful. I'm doubling the dough because it's just too good to make only one loaf. I'll be posting it within 3 weeks time.

If anyone wants the original with the rye starter or just to compare and see how I translated it or maybe try both side by side I think I'll post that one too. It will be like taking a voyage through my brain to see how a recipe gets adapted. And I'll add a few notes as to why I did what I did.

Coincidentally, I stumbled on this thread, and . . .

My mother in-law just returned from Hawaii, and guess what she brought me?

Honolulu Cookie Company Cookies. So here I sit in Maine, as I write, sampling one covered with dark chocolate. Maybe someday, I'll get there myself.

I love Kona coffee, as drip coffee, and flavored with something, like Kona Macadamia or such.

Just a smart comment from me: Hawaii IS THE STATES. Please say 'mainland' or 'continental usa' when referring out Hawaii.

And yes the short bread butter macadamias,yummm.but we sent home several different one as gifts.my fav is the Kona coffee....and I admit we saved those for us....
OK Hector find a good excuse and take Rose back to Hawaii.She more than earned it...but I want suitcase space* I'm small....and I love* Hawaii..

andi, someday we will find a way to return to hawaii. hopefully our inimicable hector is still looking for a way to promote the upcominb book and have an excuse!

mercedes the breads are all exquisitely beautiful. and yes--that is indeed the speja bread. i'm making my version into a torpedo/batarde shape and cutting it on an angle. i think it will be great with cheese but so far butter is all i'm needing!

Andi, thanks for tasting our cookies. I get them all the time as office Christmas presents. Which cookies did you get? They have so many. Was that the shortbread? The ones with Macadamias (grown locally) are the best.

Oh Rose you know how I love you....and keep up, as I can, on your blog.....
I love that your dad is going to be 94,you are so lucky to have him all your life***,you know too well....
Well Barry and I just got back from Maui.You know I rave about MY butter cookies**,((my Grand mothers Hungarian recipe))....well in Maui* ..Lahaina..we sent home cookies that were as good as my grand mothers.....they are not in the states yet, but if you go on a vacation to Hawaii.lol.who has time? (you and Elliot))IMPORTANT!!!!!!!!
YOU MUST TRY THESE...they are from THE HONOLULU COOKIE COMPANY......ALL FRESH INGRE,HAWAII HAS JUST EXPLODED WITH FRESH FOOD,EVEN MORE WITH ALL THE TECHNOLOGY...

I was very happy to see this bread because I think it is one I baked some months ago: speja. I come from Spain but I lived in Sweden for almost 3 years, and baked, baked, baked many things there, some of your wonderful book "The Bread Bible".
I visited the Bakery Riddarbageriet when I went to Stockolm, and it is a very small one, where you can drink a cup of coffee (what I did, of course).
You can see my bread in this address, which is not a blog, just some pictures for my family (you will see as well a picture of your "Burger Buns", which I baked many times).

Hi Rose! No harm done - Finland or Sweden, we are good friendly neighbours - the main thing is that we get good bread!!! :) I am proud to say that we have great breads here in the Nordic countries! - and especially in Finland! :) :)

This is my first posting, though I have lurked for months. I have your Bibles, plus the Christmas cookie book. You are so connected to your fans and colleagues and seem to love sharing and being a collaborator so much that *ahem* your work simply is the conduit that allows that to happen! I hope you know what I am trying to say!

Anyway, adding to what Hector said above, I would love a "Rose's Heavenly Breads" based on European bakery recipies. I have a book by Rick Rogers called Kaffeehaus that is about European pastry and I just love it. I *think* you might know him; he thanks you in the acknowledgements. Perhaps he used your work at some point. He does include some breads but certainly I would adore a RLB compliment. For those of us who don't have Grandma's recipies but can remember what European recipies TASTE like, it would be a wonderful treat.

Your dentist is sooooooo lucky. Imagine, to have Rose Levy Beranbaum as your patient, and to have her bring bread to the appointment. I won't even describe some of the "goodies" that some of my patients have proudly presented to me. They are so excited to give them to me, and I am soooo appreciative, but there was only once, in the 20 years that I've been practicing, that it was given anything worth the calories. (rather yummy brownies with peanut butter...not something I would normally like, but they were delicious, beautifully prepared and presented.) On the whole...well...let's just say...not good. It's sweet of them to do it, but I'd go out of business if I bought each and every one a copy of your books! (Besides it would be sort of rude I would think..."oh..and by the way, if you plan on baking something for me, why don't you take a quick read through some of these books first..."

It's a small world! :) And the bread does look amazing - I have the book, but I've never tried that particular bread. I should, apparently! I'll wait for your tweaked recipe, though. :)
