A Rescue Starter

A dear old friend and esteemed colleague, Jim Fobel (author of 9 cookbooks!), called recently to offer me some of his lively 250 year old starter he had purchased from King Arthur. He couldn’t bear to throw out the required half so he has been feeding two starters but doesn’t have use for all that starter (does this sound familiar?)!

Jim lives in Manhattan around 14th Street so we decided to offer it to anyone who is willing to pick it up from him.

I have had good luck storing my starter in a large glass container in the back of my refrigerator. It has sometimes gone 2-3 months. When I need it I bring it to room temperature and then feed it for a couple of days on the kitchen counter. So far this has worked for me.

Oh what a disapointment.
I am way out here in the Rockies of New Mexico. I love to cook and bake and do so frequently.
I have been looking for a starter for several years now without any luck, and, I can see that my luck hasn't inproved.
I seem to remember reading something about spreading some starter on a sheet of plastic wrap and letting it dry completely, storing in a cool dry place for however long, then rehyderating feeding and off we go for another while of pancakes and breads.
I don't know if this works or not, but it might be worth experamenting with. Then those of us that woould like to obtain a starter of a starter...LOL...could send a self addresed stamped envelope.
Sounds good to me, I certainly would be happy to play the game, just let me know.

maybe someone should start a rescue starter foster home.

starters may require care and feeding, but they rarely leave fur on your sofa or bite your mother-in-law...


How absolutely fascinating!!!!! But unfortunately Finland is a tiny bit too far away from Manhattan...... :(

I don't live in Manhattan and can't pick it up from him - unfortunately. I would love to meet Jim. I love Jim's books - my favorite is Big Flavors.

Anyway, I also have bad luck with starters. Every one I try to use, always dies on me. I just don't make enough bread for it to work for me.

I hope someone can help him out.
