New Bread DVD

The Bread DVD that I made with General Mills/Gold Medal flour is now live on Youtube and will have a permanent link on the home page of this blog.

Hello everyone again, I do apologize that I don’t have the Cake DVD copied yet, hope you understand.

I’ve added an additional convenience feature to order your copy of the Bread DVD. By mail-check, or paypal is still ok, but you can also go to my website www.myyellowkitchen.com where I’ve added the Bread DVD to watch online, and also a “Buy Now” button where you can order by credit card, too. I can’t think of more ways to do this.

I am hoping to send out 200 Bread DVDs soon, and after then will copy 200 Cake DVDs, and so on 200 at a time as you need them.

i can start mailing starting mid or end august, on a first come first served bases. please write your name and mailing address on an address label or on a 2 x 3.5 inch piece of paper (the back of a business card will do), enclose a check for $10 payable to HECTOR WONG, and send it to 2888 ALA ILIMA ST, STE 2611, HONOLULU, HAWAII 96818.

please indicate on your check: BREAD DVD. note that i will be making the cake dvd later this year, consists of 2, and it will be $20 for the 2 pack. unfortunately, i could not do this any less expensive.

the price includes the cost of professional disc replication, labeling, packing, shipping to anywhere in the USA or the World! it will go out by air, thru USPS (US mail) first class envelope.

ENJOY! these DVDs have been recorded and mastered by General Mills, with hair razor sharp and in full stereo!

I appreciate your kindness writing me back. I feel a little bit awkward making our correspondence a bit longer on the public web site and taking up your time. But since I’ve been getting conflicting messages from your site’s e-mail and your blog, and since I don’t have any other address at which to contact you, I am reluctantly posting this message. Here is a brief summary of what has happened. The answer I received to my very first message, with my question about baguette, was irrelevant and led to my complaint which was sent June 19th. That answer was from both your site’s e-mail address and your blog, and made me think it was from you. To my complaint I received a very nasty e-mail message from someone at your site’s e-mail address, writing as if they were you. I answered that email respectfully, hoping that you would see it also. Then on June 20th I saw a nice message on your blog, and this time it really was from you, with the recognizable mild tone of speaking . Today I received another e-mail, signed with your name at the end, but again it was not the kind of message that you would write. At first I thought I should just ignore and forget, but I want you to know what is going on in reality and how that could turn readers off. Out of respect for your site and your readers, I don’t want to go into the details of the messages; but I can send you all the copies of the correspondence if you write to me at my email address. I am sure that will clarify how this all happened.

i'm so sorry ema that you had even the slightest bad experience on the blog. i'm sure it was unintentional but so strange i can't begin to imagine how it happened. anyway very glad to hear from you as your original question and posting was both charming and interesting. i realized after i posted by response that you did indeed check out the baguette on the blog but i seem to remember people posting about the special pan i had recommended in the book and how sadly it is no longer available. it had the right shape but also a lid and receptacle to contain the steam. since then there have been other steaming devices also on the blog which will be very helpful in producing the best possible baguette. steam and time are the two big secrets of the baguette (of course flour and a light touch as well), oh, and one more thought, in the final shaping try to deflate the dough as little as possible in order to have the best large hole structure.

hi ema--just found your original question about the baguette. to be honest, i usually wait several days to answer involved questions as many knowledgeable bloggers often jump in and help me out with the answers knowing how very many questions i have to field. but since you have written to me personally voicing your complaint that i have not answered your question i will take the time to do so now. i did appreciate your comments about the cake but it IS hard to answer about the baguette because it is, in all its simplicity, the most difficult of all breads to get right.
in my book (the bread bible) i have a recipe for the best baguette i was able to produce in a home oven and i think it is better than most commercial ones. there are many factors involved including the right flour (do try the better for bread flour--it was designed by a famous french baker) and the two preferments which produce that wonderful flavor i know you are hoping for. as for the texture, it is important to have a curved pan and also lots of steam in the oven.
also be sure to do a search on this blog as i'm quite sure there has been some discussion about this.
sadly, though i'm very happy with my baguette, and it took countless experiments to achieve it, my husband doesn't like this particular bread so i haven't made it in quite a while but i do miss it. to me it is the perfect bread when done right.

Hello Rose,

I have discovered you just few days ago while looking for a sponge cake video tutorial and came across to your video session. I liked it a lot: easy to understand, very informative without scientific lecturing. I've made today your Orange Sponge cake. My husband said, "This one is better than previous one you've made." So THANK YOU for sharing your wonderful recipe. Now I am in your site searching for the French baquette recipe. I've made them a lot and was able to make from J.Child book, but it still not what I remember having in my childhood and youth: the thin crusted, some slight pressure would make the crust crack and create lines like in desert, the crumb is very milky and the smell...I can't describe with my English, maybe a bit milky..anyways do you know what the secrets are to get that taste and aroma without using neither eggs, nor butter?

dear everyone, PLEASE continue to let me know if you want the DVD, I am tallying the counts, good very good so far, and i am sharing these tallies with my burning helpers.

the reason is that if I only need to mail out a dozen or two DVDs, i can burn it myself at home with home-made quality (not necessarily better for DVDs... but obviously better for cakes!). However, if I need to mail out a hundred or two DVDs, i will end up burning myself... anything near 100 copies I will use a "stamping service" do the burning.

again, this DVD will be the real thing, the quality of the video is superb, you can watch single hairs strands on Rose's hairdo!

as you see on youtube, the bread dvd is near 15 minutes long. it is fitted on 1 DVD.

the cake dvd will be posted near the time the book is released, it is fitted on 2 DVDs, near 60 minutes long each! this is as close and everyone will have a chance to reach Rose without having to live on the same town...

it was suggested to package the cake DVDs in a 2-disc-mailer, and to package the bread DVD in a single disc mailer, and to give the option of cake-with-free-bread-included (since bread is rather short) or bread-only. what do you think? i am already getting confused.

how many of you would like this bread video on an actual DVD? let me know... as i need to plan ahead how many discs to mail out.

i have the master DVD disc, and the quality of the video is hair thin sharp. the cost will be approximately $5, postage included, for 1 DVD disc containing the bread videos.

you all must let me know, as there is quite a bit of reproduction logistics, duplication, distribution, etc, i must coordinate...

this DVD disc is the real deal as good as it gets. General Mills / Gold Medal flour has done a fantastic job creating the DVD disc, with easy to use menu buttons, and I am the person to make it available to you all!

there will be a great dvd posted in a few months of all the techniques from the upcoming book. Hector Wong has offered most generously to send out hard copies to those people who want them just for the minimal cost of production and shipping. probably the bread dvd above will also be available.
