Hector's UTube Demo of Rose's Heavenly Cake Strips

Jun 25, 2009 | From the kitchen of Rose

This is a great demo of how to use my cake strips for a variety of different size pans.

Be sure to keep in mind that rubber bands may not be suitable to use in the oven. Hector uses these special silicone bands.

These are the elastic bands Hector uses to keep the strips in place:

You can use the metal clamps to shorten the length of the strips when necessary.

Comments

They keep the sides of the pan from overheating and help the cake to cook more evenly, resulting in perfectly level cakes.

Please tell me what possible purpose is
served with these bands around the
outside of cake pans. I have been
baking for over 40 years and I have
never seen anything like this. I am
a bread baker for 30 years and I love
Rose's bread book but these bands are
puzzling me.

Hi Hector, Are the clamps that you used when fastening the 3 strips together ordinary office/paper clamps or are there special ones that are heat safe for kitchen use? Thanks for the demo!

Great posting! Thanks.

thanks Melinda! did my match (pi, radius, circumference, etc, etc) and determined 3 of the strips for the 9" pans would fit just right on the 12" pans. so that is what i wanted to show on this video.

got a phone call yesterday asking if i rehearsed for this video or if i had a script? the answer was no, this was done self and spontaneous with the camera on a tripod. the upside down incident and phone ringing were real. but i did make sure to do a short test at the beginning of the video to make sure i wouldn't show more than appropriate and that my voice would be clear to understand (to as good as possible since english isn't my first, nor my second language!!!)

Hector, I love it that you put it on upside down first and that the phone was ringing in the background. You kept it real! I wouldn't have thought to use 3 cake bands that way for the larger pan. Very interesting. Cheers
