good call on the type of towel to use. I don't bother to cut it into a shape, however, just put it at the bottom of the pan "au natur"! We're all in such a rush these days! And your caveat is still good. Just got your new book and am already drooling and in a state of delirium over which to try first---

i assume you mean to cut a round of it and line the bottom of the pan. i've never done it but if i were to try it i would use the bounty towels designed for use in the microwave as they are unbleached and since they produce these towels specifically to come into contact with heated food there must be a reason they implicitly don't recommend just any towel or napkin!

Hi Rose: just watched your most informative DVD's on cake prep; always useful. I'm taking a chance here in asking you --I wonder whether you've ever heard/used a paper napkin or towel to "line" a cake pan? Hope this doesn't gross you out, I've tried it and surprisingly it works fairly well when one doesn't want to bother with parchment. What problems might arise, do you think? Thanks Doreen
p.s. the offer for cooking classes still stands !
