Rose, is it permissible to use your All American Pie recipe and Flaky Cream Cheese Pie Crust Recipe to enter an apple pie contest? I would have to submit the recipe with my pie, and since it is your recipe, I wouldn't want to use it withour your permission.

Rose, I've been struggling with the ten-grain bread for a very long time. During the final proof the seam and or other areas of the shell tear apart. No amount of sealing prevents it. It's so disheartening to see after such careful attention has been given to this point. I have varied the hydration, amounts of grain, tried different flour combo's, shortened and lengthened proof times and temps. Even used a variety of shaping techniques, all to no avail. I love this bread and want to continue making it but the frustration is getting the best of me.
I would be grateful for any help you can offer.
Thank you.
Bob

Hi Rose,
I am from Montreal, and it is with such saddness that I won't be able to come by and see you because I will be hosting my son's first birthday. I will drive to Boston, or New York to come and see you. Is there a chance of anytime soon you will be going into those cities?

Rose - thanks so much! I'll pick up Gold Medal and try again! We met at the book party for The Sweeter Side of Amy's Bread at Chelsea Market a while ago. I look forward to seeing you again at a book signing - but do you ever come and speak at the 92nd St Y? They have great programs -

what fun jeanette!
meryl, king arthur flour is not bleached and therefore is no substitute for the flour called for in my recipes. all but one requires bleached flour. try it and i'm sure it will work for you.
anonymous, i do hope you are martha's producer as i'd love to be on her tv show. i am going to be on her radio show from 4-5 this thursday!

Congratulations Rose on such a beautiful book! I have received my copy this morning (21st Sept.) and I am overwhelmed by the number of beautiful, succulent-looking cakes contained in it. I must admit I was a bit late in ordering it because I was anxious about the cakes being made with cake flour, but now that I have seen the contents I will get around that problem by either using 'Kate' flour or trying in some other way to procure the right flour. I may even make a special trip to the US, look out for me when on your book-signings, you never know I may surprise you, as you did me!!! Bless You!

I was so glad to read your comment. I am a seasoned baker and rarely have problems - until yesterday. I made the plum blueberry upsidedown torte from the new book for our Rosh Hashana dinner. I used great fruit my my farmers market - the cake released beautifully - looked great - I sent pics of from my I Phone too! All's well until we cut it - it turned out to be a soggy mess! I baked it 50 minutes - the cake tester came out clean and all that. I use King Arthur flour for years - and didn't see a problem substituting it for Gold Medal. I have made similar cakes in the past - usually with apples and never had a problem -- HELP!!!!

My copy of THE BOOK arrived from Jessica's Biscuit the end of last week, couldn't wait to try it,so I made the Plum and Blueberry Upside Down Torte (page 12) for a weekend dinner party. It was certainly easy and absolutely delicious. All directions completely clear. I had nectarines and peaches in the house so used them instead of the plums and it worked perfectly. It was a great end of summer dessert.

Oh Heavens, Rose, you have done it again. I haven't even finished looking through my recently delivered Heavenly Cakes, and I have at least a dozen cakes that I need to try this week in my 30 C kitchen! The recipes are mouthwatering and the photography is stunning. What an amazing work. I must finish reading it...just wanted to say thank you!
