charlie, creaming actually takes place in the two-stage method too! do check out what i wrote about understanding the cake baking process in the cake bible as i know it will interest you. and in some of the out-cakes and you tube segments you will see how the batter looks after beating. eventually, when i get a chance to do more dvd's i'll be sure to include the entire mixing process of the layer cake.

I love your new book...
I first fell in love with your Bread Bible and I'm currently baking my way thru it... every friday I quadruple your recipe for Ciabiatta bake it into two big loaves for my families shabbat table - Heaven!

I so appreciated your Times article because for the last few weeks Ive been reading as much as I can about cakes and cake science... Im still confused about the roll of eggs... when do you beat them in slowly.. when do you whip them and why.. but I hope to get to the bottom of it all on day :)

One request can you please post on creaming.. its such a vital step in common reciepes (I know I know .. you use the two-stage) but just for educating the masses just so we know what well beaten butter looks like... some pictures please!

Congrats Rose - excellent article. Never knew that those ancient Egyptians were cake eaters. I found your choice of web links useful. Some of course I recognized such as Butteryum and Heavenly Cake Place!

kathleen, i can't imagine a nicer compliment--and you are the very first to respond!

it was a huge undertaking to condense or synthesize everything i know feel, and think about cakes into 2000 words--a great challenge that i'm glad i attempted as it made me see things more clearly as well.
