denise, i like crispy cream puffs so i fill them as close to eating time as possible but many places serve them softened and they are delicious that way too so you can decide whether to go for the convenience of filling them.

i would store them in an airtight container in the frig. if you want them crisp i would reheat them briefly in the oven.

Hi Rose,
I have a 911. I baked puff pastry for cream puffs today. We are giving a surprise party and this is the first time I have tried this a head of time. They have been cleaned out and now---what is the best way to store them for three days until filling?Is it possible to fill them a day ahead to save a bit of time?
This is an old family favorite but I had forgotten how labor intensive it is for 50 people!

you could certainly try it to see if you like the flavor combination. i use cream cheese in my brownies so i can't see why it wouldn't be good in a buttercream!

I was wondering if you can use dark chocolate instead of white in your white chocolate cream cheese buttercream.

Rose, that "book sandwich" looks like a section of my bookshelf! All three are among my favorite baking books. The hammered copper pan they're sitting on is a great example of something that is both beautiful and functional -- like the books themselves!
