sana, i use the recipe for super stabilized whipped cream from Cake Bible or from Rose's Heavenly Cakes.

Oh, Hector, gorgeous stuff! And with respect to another gorgeous chocolate valentine post on your site, I always mix chocolates, too, rather than use one in a recipe. I've found it's much more delicious than using one. (Of course, I always mix coffees, too, when I buy a cup somewhere!)
