Oh Hector - you have really outdone yourself this time! That settles it - our planned dream trip to Hawaii MUST coincide with one of your fabulous cake events... What time of year does Maui have the best weather? And what events do you participate in annually? Our 20th wedding anniversary is next May but I think it might be too hot by then? I am really dying to meet you and see one of your overthetop creations in person! Karin of karin's konfections

Oh, it's a map of the world! I didn't realize that when I looked at it the first time. Very cool. And I love how you used mangoes. Is this your entry for July's fruit show and tell? :) Here I am posting an entry for my mango clafoutis in the show and tell, and you bake the world!

Kathleen. This is 6 ft wide. The ocean is little biscuit de savoie cutouts, syruped with frangelico. The roses are mousseline with grand marnier. The continents are mango passion tarts.

Whoops, sorry. I didn't mean for my query about the cake to be anonymous. I was just so excited about the cake, I sent it too quickly. :)

Hector, what is that in the photo? A huge mango cake? Is mango in the cake batter also? It looks amazing. Please give us a description. Thanks.

when it rains, it pours, and with the most amazing way! since i will be at Kona for the 7/31st mango festival, i have been invited for a stint at NELHA Farmer's Market (Natural Energy Laboratory Hawaii Authority), 7/30th. Kona's most guarded celebrity chef, Olelo pa'a Ogawa, has choreographed a cooking demo, 2:00 to 6:00 pm.
how did honolulu's mango mango man get invited there? no idea, and don't need to know. i will pull this thru and just focus on ONE thing: do what i do best: put a mango rose on a cake.

Olelo says: See you next Friday, July 30th at NELHA Farmers Market from 2-6pm at the NELHA Gateway Center. I have planned a fun afternoon using our locally grown seafood and Hawaii tropical fruits: Ken Love will be one of my guest speakers and sharing his manao about our exotic fruits. Pastry Chef Hector Wong is flying in from Honolulu to do a dessert demonstration. Floral designer, Mike Rosato will demonstrate a tropical fruit arrangement
using our colorful locally grown fruits. I will be doing another cooking demonstration using Kona Cold Lobsters and showing you some tropical fruit salsas and other dishes! You get to sample all that I prepare and Chef Hector Wong's creation as well! See you there! Remember to bring your coolers!
