david, unless i specify otherwise i always use whole milk.

the apples usually yield 1/4 cup juice but it depends on the apple variety and how long they have been stored. the important thing is to let them sit for a minimum of 30 minutes so you don't have a lot of extra liquid in the apple. if it's only 1 tablespoon that's fine. the liquid that exuded is not needed for the topping--it's just a good way to use it up.

Dear Rose,

Some of your recipes ask for milk, such as "She Loves Me Cake". What percentage of fat content in the milk would you recommend?

Also, in your "Apple Upside-Down Cake", it says to save the liquid from the apple topping. Just how much does the recipe give? Because I could barely get a table spoon of the juice after the draining step.
