Happy Thanksgiving!
Nov 25, 2010 | From the kitchen of Rose
And here's a little holiday present. Last year, Woody and I went on a mini press tour to Montréal where we had a most delightful lunch with Lesley Chesterman who writes for the Montréal Gazette--so delightful, in fact, that we never did the interview so she had to call me several months later for that part.
Here is the delightful result of our conversations plus three recipes which you may already have but do check them out just in case.
Please note, it is Rose's Heavenly Cakes that is available as an enhanced Kindle Ap and the special promotion of $9.99 is no longer in effect. Hopefully The Cake BIble will eventually an e book as well.
May your turkey be brined, crispy skinned, and juicy! Mine will be chicken this year with just the two of us. At least it's free range.

I thought I already posted this...but the blueberry pie recipe is Rose's. I can get fresh blueberries out of season at my local supermarket. They aren't usually that good...this happened to be a pretty good batch (expensive...but good)

Thanks, I'll definitely write that down for next time.
Yes, yes, yes to your pecan pie, it's one of the few instances where I love a somewhat sweet dessert. It's nice to think of you enjoying it as a special treat this weekend.
Speaking of not-too-sweet, I was in two places in NYC recently where the desserts didn't seem to have enough sugar- in fact, they were dramatically under-sweetened, perhaps even unsweetened. Is this some sort of new trend?

julie, i still maintain that cooking the breast separately is THE answer and so glad to think of you having this. the only tweak i've made, and you may already have done this, is to sautée the shallots instead of putting them in uncooked.
we're home this weekend in ny so as a special compensation treat i made pecan pie for tonight. it's hard to wait! is there anything better?!

Hope everyone had a happy Thanksgiving!
I tried the rolled turkey breast roast and the sausage/chestnut stuffing from Rose's Celebrations this year, and they were both superb. I loved doing the turkey breast as a separate roast, which allowed me to make stock before the big meal, instead of after it.
Thank you, Rose, for more wonderful fare, both of those will become annual favorites in our home.

corn syrup as 24% water and glucose has 15 to 19.7% whicih means if you subsitute you may need to add a little water as well. i would try it first without adding water and if it seems to stiff then add a small amount. and do let us know how it works!

Sorry but I don't know where to post my question, please if anyone can help me this was my mail to Rose, thanks!:
"I'd like to know how can I replace the light corn syrup from the " Miss Thompson's dark Chocolate Frosting" glucose maybe?
It's a product I see you use a lot but we don't have here in Argentina.
I have three of your books and I love them all!
Thanks in advance for you answer.
Cheers from Buenos Aires!"

Jose:
There is a supermarket in my neighborhood that tends to have a lot of "out of season fruit" that is shipped up from South America. It tends to be expensive, and not as good as the seasonal local fruit...but it got the job done.

Bill, which recipe did you use for the blueberry pie? Did you use frozen blueberries? I love Rose's blueberry pie, but I thought her recipes require fresh blueberries, and blueberry season is over. I haven't made the pie since the summer...

Really enjoyed the interview...hope everyone had a fabulous thanksgiving! Rose: Your blue berry pie and black forest cake were the hit of our family get together. (I made the pumpkin pie, of course, but that stayed at home. My "other half" can eat the entire pie in one day!. )

Happy Thanksgiving to all of our wonderful, worldwide community of bloggers and especially to Marie and the Heavenly Cake Bakers who may be serving some left over Chocolate Cake with Peanut Butter Ganache along with the pumpkin or pecan pie.
I am looking forward to bringing my brined and roasted turkey and Pecan Tart ala Rose for my contribution to the family gathering.
