Ode to Fruitcake--Yes FRUITCAKE!

Dec 29, 2010 | From the kitchen of Rose

I just have to share this delightful blog posting from Ah Zhen. I don't know where in the world she lives but I do know she is one terrific writer and my bet is that she is also one terrifc baker.

Ah! i just clicked on the "view my complete profile": Singapore is the lucky country in which she resides!

Hi Ann,
Rose used glacéed red and green cherries, lemon and orange peel. In "Rose's Heavenly Cakes" we eliminated the citron for the Fruitcake Wreath. If you do not like citron, you can substitute an equal amount of the fruit.
Once you make and try the cake, you can decide what combination of these fruits or other fruits for your next cake.
I never liked fruit cake until I tested the Fruitcake Wreath. I enjoyed it as it does not cry out--super sweet and rubbery fruit. The cake comes to the forefront.

I would like to know what candied fruits Rose used in the less fruity fruitcake recipe that appears in the cake bible
