Very informative piece! Thoroughly enjoyed reading it. I ran out of AP flour while making abelskivers and substituted a mix of cake flour and bread flour. The texture of the abelskivers was changed and surprisingly for the better.

I'm going to bake that cake soon. Even though my husband has a reaction to lemon, it sound as though it is mellow. If he doesn't eat it, well, then there is more for me ;)
