Introducing American Record Breaker..Haley Beranbaum!

We are so proud of our granddaughter for her extraordinary achievement in the US Parlympics swimming competition.
An article from the SSC Fast Lane reads: "Haley absolutely destroyed the American Record in the 50 Breast and 200 Free at the January Challenge. Haley has quickly established herself as one of the top Americans in the US Paralympics Swimming ranks.
Haley is currently enrolled in the "emerging athlete" program with US Paralympics, which means she is watched very closely by US Paralympics Swimming Officials and will no doubt be in consideration for both national and international teams. Haley's commitments to hard work and technique have played a major roll in her development along with her contagious enthusiasm. Haley is a model for SSC spirit and belief."

ruth it really depends on the cake as to wether it will work well in a bundt pan. i would try it and see what happens but don't fill it more than one inch from the top. if the baked cake it isn't level, i.e. if it's mounded in the middle and doesn't sit flat on the serving plate, increase the leavening. if the recipe you're using works in a standard layer cake pan it should work in a tube pan as it has the extra benefit of the center tube for support and conducting the heat.

ruth, i do hope you have my newest book, "rose's heavenly cakes," because there are many dairy free cakes in it including a great banana cake and carrot cake. i do hope this will approach what you are searching for.

I want to make a cake, large spice bundt size, from recipes for a three layer cake -- carrots, raisins,nuts, maybe coconut...does the fact that the recipe has these heavy-ish ingredients preclude my doing it this way? I avoid icings because (a) I am very dairy-allergic and so many call for dairy incredients (2) I get baking-fatigue (84 yrs old) I would probably make up an orange syrupy glazey 'thing'...I've been mostly a NYTimes baker, and I know very littlr about equivalences, but I do have your beautiful books...I will appreciate advice

I have the pleasure of living in Washington and being friends with Michael, Francis and the girls. My son Hunter is also a dwarf and we are all so proud of Haley's accomplishments!! thanks everyone! and sally--what a cute play in words. i must tell you that the first cake i made with haley and her sister elyse was the velvet fudge cake now in RHC. actually i made the cake in the silicione tube pan in NY and we flew with it to seattle where the family lives (snohomish) and i'll never forget the look on her face when haley lifted the pan and unmolded the cake! actually i have an adorable photo of the two of them after having unmolded the cake and wearing the special chef outfits for kids. i'll photo the photo and post it!
