At Home with Chef Suvir Saran

This is my third visit to the wonderful Masala Farm home of Suvir Saran and Charlie Byrd but the first time that Suvir cooked dinner, and what an extraordinary treat it was. Here it is in all its glorious detail!

CRISPY CREAMY POTATOES AND GARLIC


When it was time for dessert Suvir and Charlie turned to each other with a questing look as to what the other had prepared, which turned out to be nothing. No problem: Charlie dipped into his special stash of sour cherries that had been mascerating in verjuice for many months and also located a container of crème fraîche. Served in lovely glass goblets it was so tangy creamy luscious/fabulous I forgot to take a photo!

When I returned home,I lost no time in making those addictive crispy creamy potatoes with roasted garlic. The recipe is ini Suvir's most recent book Masala Farm cookbook.

suvir, that is the sweetest thing you've ever said about me. as i've mentioned before, your humility is a character trait that i aspire to. as for you aspiring to be inspired by me, now that you reminded me of your upcoming birthday and rerealizing that you are young enough to be my son (and i'm not talking about having been a teenage mother), you have plenty of time to perfect your already near perfect self further.

Rose - with as many pounds of chicken I have fried and with as much deep frying I have done from a VERY young age - I ought to be able to give you a precise temperature reading but alas, I am not as awe inspiring as you think.

A mortal failure at best and learning to be better each day and seeing magical qualities in you I hope to observe and be inspired by and to get better as I continue to live.

You are too kind and you are the best friend. Even better than a trusted thermometer or intuition.

thank you darlingest suvir. did i mention how awed i was that you could tell the temperature of the oil by the way it moved in the pan and when the chicken was cooked to perfection--moist inside and golden outside without my next to best friend--my thermometer!
