that is an excellent question daniel. the reason is that active dry yeast as the most number of dead yeast cells which lends the dough extensibility, i.e. the ability to stretch!

I have a question about DOC pizza Napoletana. Why don't they use fresh yeast? Wouldn't it be better??? If its a complicated answer I understand...

I just purchase this bowl and I LOVE IT!!! I had to whip up 2 egg whites for the Silk Meringue Buttercream and it was awesome! It is the perfect width for my hand mixer and it really did do it fast.
