Refinements to Concord Grape Pie

The season for Concord grapes is short but as the skin on the grapes is very thick they freeze perfectly for well over a year, especially if placed in ball jars.

I now prefer to thicken the filling before baking. Allow it to cool to room temperature before scraping it into the pie shell.

Julie, yes, that's just what i meant. no cover, just bring to a boil to thicken and then cool.

Rose, I love, love, love your concord grape pie, it is sublime!

I'm eager to try this refinement - when you say thicken the filling, do you mean to combine all the filling ingredients in a saucepan and bring to a boil, then cool? Any cover for the pan or reduction of cornstarch?
