In the immortal words of Escoffier, the secret of great cuisine is "du beurre, du beurre, et encore du beurre."On a recent visit with, with my friends the Kricheffs, to Balthazar Bakery in Englewood, New Jersey, Marge nudged me to look through the glass window into the factory itself. Behold! More butter than I've ever seen in one place in my life. And yes, the pastries reflect it.
