The pictures in this posting demonstrate how we test and evaluate recipes. The Chocolate Pavarotti (page 58), dedicated to tenor Luciano Pavaratti, could be called the chocolate velvet as it incorporates the addition of melted white chocolate in the same way as does the white velvet whisper cake in The Cake Bible, giving it a higher rise and more melt-in-the-mouth quality.
