Fillings for Hot Weather

I need to make a birthday cake for my niece and need help on the type of fillings I can use in hot weather

The cake will be covered in fondant therefore cannot be refrigerated.  The average temperature here is 86 deg F. 

What filling can I use?  How long can I keep the cake out?  Please help….....

I would go with Mousseline. It holds up well in hot weather and can be kept at room temperature for 2 days. Stay away from fillings with whipped cream, cream cheese.

Mousseline should hold up well.  You could also use a cooked frut puree, thickened with agar, which will not melt (once set) until well above 120F.
