Korovai - Wedding Bread

Our daughter & SIL are having their marriage blessed in Church this Sunday. Since I baked a small wedding cake for them 2 yrs ago, I decided to bake them our Ukrainian traditional Korovai. Korovai is the Ukrainian version of a wedding cake and symbolizes community. Then decorated with baked dough ornaments. Two doves in the middle for the bride & groom, and others representing friends & family. The entire arrangement is surrounded by a wreath of periwinkle, a symbol of love & purity. The largest Korovai is shared with the guests as a token of good luck & future prosperity. The smallest Korovai is for the bride & groom.

Thank you. You give me encouragement to complete everything tomorrow. I do have 1 question.  I’m planning to add eyes & wing details using royal icing. Will the royal icing adhere to the doves since I egg washed them?

I am soo nervous about Sunday, even though it’s just family. 

Following everyone’s accomplishments here inspires me very much. Thanks so much.

Maria, those are just spectacular! I have never tasted Korovai (as far as I know) but I sure would like to after seeing those. What is the flavor like? If you are ever inclined to share the recipe please put me on your list. As far as the Royal Icing in concerned I don’t think that there will be any problem. The great thing about royal icing is its versatility as well as its strength and the control that you can get when piping. Good luck on Saturday you are sure to be a hit.

Heavenly loaves! East European baking is I think under represented. I would love to see the recipe also.
