I like your cute, double-tall cupcakes!  And it’s great to get your read on this cake, sounds delicious.  Not sure if your flat tops were because the structure of this cake is better suited to tube pans than layers or cupcakes, or because of baking at altitude…

Review after devouring them: They completely disappeared after a huge dinner, so they must have been good. The cake was great, though I think it suffered a bit in the fridge. I didn’t care for the frosting, it was too stiff and too massive for me despite thinning it down so much. The cake, at room temp, just by itself, is probably better. I’ll try it again at 1600 ft and report back.
