I made a batch of Oreo cupcakes this weekend for my brother in law who is home from college. The cupcakes are TCB Chocolate Fudge, and the filling is TCB Chocolate Chip Whipped Cream - minus the chocolate and nuts, replaced with Oreos. For the frosting, I mixed a half batch of vanilla mousseline with a half batch of a shortening based buttercream (House Buttercream from The Whimsical Bakehouse). My brother in law LOVES grocery store icing, made with shortening, . I found that mixing the two together wasn’t too bad….lighter than mousseline, but not as greasy/unpalatable as all shortening frosting. Hope that makes sense. The filling was outstanding. I highly recommend it!
