Oreo Cupcakes

I made a batch of Oreo cupcakes this weekend for my brother in law who is home from college.  The cupcakes are TCB Chocolate Fudge, and the filling is TCB Chocolate Chip Whipped Cream - minus the chocolate and nuts, replaced with Oreos.  For the frosting, I mixed a half batch of vanilla mousseline with a half batch of a shortening based buttercream (House Buttercream from The Whimsical Bakehouse).  My brother in law LOVES grocery store icing, made with shortening, .  I found that mixing the two together wasn’t too bad….lighter than mousseline, but not as greasy/unpalatable as all shortening frosting.  Hope that makes sense.  The filling was outstanding.  I highly recommend it!

Sorry about the crappy photos, but photography is not my thing.  I sometimes wish it were, because it’s fat free.

haah I wish anything fat free was my thing too!  The cupcakes look great! I want to try them myself!!

Thank you everyone.  I did the whole Oreo in the filling.  I was going to make a cake, but ended up with cupcakes because I didn’t have enough brown sugar to make a whole recipe fudge cake, and the only cocoa I had on hand was Hersheys.  I wasn’t about to run out on Memorial Day weekend, and I really wanted the fudge cake as opposed to the TL Devils Food Cake, so I opted for a half batch of cupcakes.  Now I have to bake something to go with my leftover half batch of mousseline…;)

Sounds like you improvised perfectly!  I love the idea of oreo cupcakes… will have to keep these in mind for the kiddos!
