How much to make—help, please!

I have an order for 96 cupcakes with mousseline….I will be using the 1M tip so it will be a generous amount. Any idea of how many batches I will need to make?  gulp Thanks in advance!

Bernadette, I have in my notes that 2/3 of a recipe (3 cups) frosts 24-30 cupcakes, depending on how large my bare edge is (I leave the edges bare to avoid getting too much with that 1M tip).  So, using the 3 cups/24 cupcakes number, that means that for 96 you would need 2 2/3 batches of the full 4.5 cup recipe to frost 96.  If you don’t want to leave a bare edge, you will need more.

Thanks so much Julie! I was so tired last night that I just went to bed when I got tired of figuring out all that I need for the order I have this weekend and then for Tuesday. I figured three batches so that’s great. Good idea about leaving the edges bare, too, I want to pack as many as I can in the containers I have without them getting smushed.

Right on the money, Julie! smile I am so tired of swirling 1M’s right now, my wrist is sore! lol I did 120 cupcakes today (the other ones past the 96 got inferior icing!)

Bernadaette, I’m so glad the quantity worked out well for you!  We must swirl in similar ways to get the same yield.  And oh my, 120 cupcakes is a lot!  What flavors were the cakes/frosting?

I barely had enough left Julie but there was some! Yes, it is alot and I don’t want to see a cupcake again for months! The cake was Sylvia Weinstock’s yellow cake and Rose’s mousseline. I just love that mousseline. It’s a little longer to make than what I used to use but I can tell the difference in taste, of course, and it’s texture. Quite heavenly!
