More than big enough…probably too big.  The pot that caused the mess was tiny tiny…for melting butter…probably 1 1/2 or 2 cups…and it was only slightly too small…
I prefer an egg white based buttercream to a yolk based buttercream primarily due to the lack of storage space in my fridge…so if something can stay out on the counter overnight when guests are expected the next day…that is the route I will go…hence, the quest to make the maple mousseline!
