BUSINESS LETTER FOLD

Hi,

I am working on the Basic Sourdough Bread and have enlarged the recipe to seven fold. My question is to the folding. When I do the business fold once do I go directly into the next fold, Or, do i stretch it and then do the fold? I tried to go into the next fold and it was very bulky. I have read the recipe several times and it seems I should go directly into the next fold. Which should it be?

I often just go to the next fold directly, but sometimes I pat it down just a little.  You don’t want to completely deflate the dough, so yes, it is a little bulky on the second fold.
