Hi!

I bought your bread bible a while ago and in the recipes where you use yeast, you use this instant yeast. Well, that yeast is very hard to find in Sweden(where i live). Have searched google many times to import it, but the shipping cost is ridiculous most times…. I know that I can use fresh yeast, but really wanna test your recipes all the way. Do you have any ideas how to buy this yeast at a fair price, or anyone else of you who writes in this forum.

My best suggestion is to find someone traveling from the US or GB and ask them to bring you some. Dry instant yeast has a long shelf life and doesn’t weigh very much. In the meantime press ahead with the fresh yeast that you have. It is not so different. Many bakers prefer it.
