Angel cake and citrus oils

Hi,
I would like to make angel cake using citrus oils. Is this possible? If so, at what stage do I add them.

If you were using zest, I’d suggest adding it to the sugar and mixing it in; the oils added to the sugar might cause a bit of clumping but it would work the same way.  A little goes a long way so you might need to experiment regarding the amount.

Wouldn’t the oil from the zest ruin the integrity of the egg whites?

Not if it’s mixed with the sugar first.  The sugar will absorb some of the oil but retain the flavor.  I would reserve a bit of the sugar to mix with the zest or oil and use that as the last measure of sugar added to the whites; this way the structure of the whites is pretty much set.  If you were to add oil (or had yolks) to the whites at the beginning, they won’t reach full volume and that can make the cake seem gummy and heavy.
