oh Jeanne, I forgot to as….when do I remove the wrapping from the cakes after they have been put in the refrigerator to thaw? Should I take it off so it’s in the fridge without wrapping overnight..or in the AM after it has defrosted? Also, when you use Fondant, can it be applied to the cake right after taking it from the refrigerator? I’m afraid of wetness.

leave the wrapping on it while it thaws; you won’t have to worry about wetness.  just make sure your coat of buttercream is very smooth, gaps are where fondant bubbles can form.  If bubbles or air pockets appear, use a pin to release the air and smooth it out.
