Thomas Cake

This was my first ever stacked cake - a Thomas the Train cake for my daughter and son’s birthday party (they are 3 and 2).  I have received so much help and advice from this site!!! I was originally going to make a sheet cake but for various reasons ended up with this stacked cake.  I made the chocolate trains months in advance, before I changed the size of the cake, thus they were too big to fit on the sides and I ended up “leaning” them.  I was still pretty pleased with how it turned out.  Bottom tier is sour cream butter cake, top tier chocolate fudge cake.  Filled with chocolate fudge (not a Rose recipe) and frosted with vanilla mousseline, with a little hi ratio shortening added.  The chocolate trains were made according to the chocolate method from The Whimsical Bakehouse. I’m getting pretty good at using my bench scraper for smooth sides of cakes, but still have to practice more to get those nice corners and smooth tops.  Someday.  wink

Wow, Gia, that’s one fabulous cake!  How did you get the big Thomas on the front?  Your BC looks perfect.  BTW here in the UK this guy is known as Thomas the Tank Engine.  Happy Birthday to the two little people.

Thanks Annie!  I do find it so funny to hear the British words my kids pick up from the Thomas show - they say “cross” and “cheeky” all the time.

Oh and the big Thomas is made out of chocolate (well confectionary coating really) and I stuck him on with some extra buttercream

Woohoo…. you’ll never be able to get away with a birthday sheet cake again!!!  wink

This turned out so much more attractive than any sheet cake would have.  Congratulations!!!!!!
