Beautiful cakes Bernadette!!! The chocolate buttercream looks smooth to me…can’t see any major splotchiness. Love the daisies!

Wonderful cakes!  You’re a very skilled decorator and baker. 

The problems you talked about with chocolate icing are hardly noticeable, if you hadn’t mentioned it I would never have guessed that there was an issue.

It is so funny how we are our own worst critics.  I read this post before I read your chocolate mousseline post.  I looked at your picture of the chocolate cake and instantly thought “wow I wish I could get my frosting so perfectly smooth!” Nice work!

Thank you all so much for your kind words, they mean alot to me from such skilled bakers and decorators!

Lisa I use Rose’s mousseline, you can make roses with it if the temperature in your home is not too warm and the daisies are homemade fondant. Need some work on my daisy-making, lol.
