Believe it or not, I usee a little CDN NSF oven thermometer and place it on the same rack the cake will be.

hi there, this is it:  CDN DOT2 NSF Oven Test Thermometer http://www.amazon.com/CDN-DOT2-Oven-Test-Thermometer/dp/B000095RC5/ref=sr_1_2?ie=UTF8&s=home-garden&qid=1250794206&sr=8-2

i also measure the temperature with my infrared and my poultry probe thermometer, and it is within fairly accuracy.  i no longer triple check the temperature, just leave the CDN DOT2 in the oven, just to make sure the oven is working.

I just replaced my PC oven thermometer (Canadian grocery store brand) with the DOT2 and I discovered the grocery store one was out (the funny thing was it was out and read the same temperature as my oven…so I assumed it was right)—also, at higher temperatures, my oven was not off as much, so I never noticed it as I usually bake breads/pastry more often than cakes.  Definitely explained why I was having so many issues with cakes recently.  Just baked Rose’s Chocolate Angel Food Cake, and it was done in exactly the stated time.  It’s not expensive and it DOES make a difference.

I have two slightly different oven thermometers, both a supermarket brand (Taylor), and they disagree by about 25 degrees F.

I haven’t tried the CDN oven thermometers, but I own two other CDN thermometers and like them very much. They work well and appear to be quite accurate.
