Recommend an oatmeal cookie recipe please…

Hello.  I was wondering if any of you could recommend an oatmeal cookie recipe that will bake up high and be soft?  Not flat and chewy.  Thanks!!  wink

Hi,

I love all kinds of oatmeal cookies and have two recipes I can recommend for delicious soft oatmeal cookies that appear on my website - http://www.best-ever-cookie-collection.com.  The first is oatmeal applesauce cookies and the second oatmeal banana cookies.  Both bake up puffy and soft.  If you want a soft oatmeal cookie without fruit, you may want to check out the Essential Soft Oatmeal Cookie recipe that appears in the King Arthur Cookie Companion Cookbook that appears on page 77.  (Unfortunately I did a search and didn’t see it on their website.)  I haven’t tried it but it has all the makings of a soft cookie since the dough includes sour cream or yogurt.

Cooks Illustrated, Best Recipes has a great chewy oatmeal cookie. I modify their recipe by adding some cinnamon and cloves, and I like to soak the raisins in rum before tossing them in.

Oatmeal cookies are a proverbial favorite with both kids and adults. This recipe is loaded with oats, which produces a crisp and chewy cookie that you can fill with chocolate chips (white or dark chocolate), dried fruits, and/or chopped nuts. I found this recipe in Jane Rodmell’s ‘Best Summer Weekends Cookbook’ and it’s a real winner. She even tells us that we can make the batter ahead of time and leave it in the refrigerator so we can make freshly baked cookies on demand.
