A few cakes from the new book

Hector I think those will work, especially if you line them with cupcake paper/foil liners. I’ve sometimes baked cupcakes in the normal liners that are placed in the paper ‘souffle’ cups (I think they’re called party nut cups). Arrange the cups on a baking tray and bake. This way I can bake more than 12 cupcakes one go.

thk shimi, i am thinking the silicone will work also as a cake strip for the cupcakes.  and EXACTLY, i could place more than 12 on a oven rack.

defensively, i will use in addition the cupcake paper/foil liners, i just hope they will fit.  because these le creuset ones are suppose to fit inside the muffin tins as the liners itself.

Hector, I think some of the silicone cupcake cups have a smaller capacity than normal cupcakes, so make sure you get full size if you can.  Don’t know if cupcakes really need a “cake strip” as they bake pretty evenly, but maybe it would improve them.  Also, I think that you can put the foil cups on a baking sheet without muffin pans—haven’t tried, but I think you can.

Wow, your pictures are amazing!  I wish I could figure out how to make my creations look so good.

It’s funny how you said you were addicted to the Rose Red Velvet Cake.  This weekend, I did four different batches of Red Velvet Cupcakes.  I was trying to find a perfect one.  Sadly, I did not like Rose’s at all.  In fact, all four people who tasted the cake thought it was not very good.  It came in fourth out of the four.  I was a little bummed.  The taste of her cakes are ususally so wonderful, but we didn’t like this one.

Now, the frosting on the other hand, was a hit!  White chocolate cream cheese?  Delish!!

Sorry to hear that, I thought it was wonderful myself, but I baked it as a full sized cake.  Perhaps that made the difference.

Sometimes I wonder if recipes do change somewhat when they are coverted to cupcake form!

Patrincia, I made the one from Rose, a recipe from Epicurious, one from Martha Stewart and one from Paula Deen.  I am not a big fan of Paula Deen’s cooking, but figured I’d try her version since she is a southern gal!  She came out on top!  All four of us liked the tangy/slight chocolate balance.  Very moist too.  We liked Martha’s too, but frankly, there was too much chocolate.  It tasted like a plain old chocolate cupcake.  Moist though.
