Mousline Buttercream failed badly

The CDN has self-calibration using the ice water method, but there is no nut to adjust.  You just put it in ice water and press a button I think.

So I finally got my thermometer!
The recommended one on amazon doesn’t ship to Canada
I was quite upset….so I shipped it to the US and had someone ship it to me
lucky that he was willing to help me out

I got a Bosch stand mixer now too smile

So I gave it an other try
The temp read 15.8 Celsius when i started whipping the 2 mixtures together b/c it didn’t seem like it’ll get any warmer
my house is currently like…18ish degrees lol

So it curdled…like a lot…at first it was going ok..then it started to look lumpy…next thing i knew it was really really lumpy
lots of small lumps
then it was like…small little balls
but there wasn’t the water like the first time i tried
i think i saw a little bit but not like the pool of water i had the first time

So I let it keep on going and it really did eventually pull together
it went from small little lumps…to small little balls…then bigger balls…and eventually it became smooth
i was so happy smile
YAY

oh and i overbeat my egg whites a bit before i added the syrup >_<
i was a little busy with the syrup and it overwhipped a bit…but apparently it’s ok for the buttercream…
would have totally failed in a cake tho lol
