My very first Rose cake!!

I discovered TCB a few months ago and fell in love!  However, I am really a cupcake kind of girl.  That’s what I love.  That’s why I was so excited to get HC since it has the baby cakes section.  However, my husband’s birthday was last week, so I figured it was time to venture into real cakes.  He LOVES coconut.  So, I decided to make the Southern Coconut Cake.  Wow.  I don’t like coconut at all, but when I had to slice a little bit off the top for layering, I had to eat it all!  I followed the recipe exactly, except I toasted the coconut.  It was a complete home run.  I think my husband’s eyes rolled into the back of his head.  Hee hee.  I have attached a picture.  Now, you can see I am not very good at the finishing off.  My decorating has a lot to be desired, but luckily my husband is not picky.  I just have to say THANK YOU Rose!!

Very nice looking cake Sarah! I think it looks good, don’t be too hard on yourself. The toasted coconut looks great against the creamy frosting.

Sarah, your cake looks delicious! I really like the contrast in colour with the toasted coconut.

Wow, for a first Rose cake, that is quite an accomplishment.  And I agree- don’t be so hard on yourself, that cake is beautiful!  It features my favorite all-time buttercream, the silk meringue in a coconut version- can’t wait to try it.  Glad to hear your coconut cake lover was so happy with it, too.

Sarah,

Beautiful cake!

I have made very successful cupcakes using one recipe from TCB, Golden Grand Marnier Cake, and one recipe from RHC, Heavenly Coconut Seduction Cake. Rose says, either on the forum or in one of her books, that any buttercream cake can be made into cupcakes. So you don’t need to suppress your cupcake urges!

I just love finding recipes that make my loved ones so happy!  Your cake turned out wonderfully Sarah.  I love coconut, and toasted coconut is even better.  I look forward to a reason to make this cake soon.
