cake pan sizes

This may sound like a dumb question but here goes—————- most of Rose’s recipes in the cake bible are for 9x1 1/2 in pans. I make them in the 9x2’s (which is all that I have) and I they just aren’t as high. One of Rose’s mantras is to use the correct pan size. Does there need to be adjustments for the different pan sizes or do I just count on them being smaller? I do have her new book and love it and am thankful that they are for 9x2’s. Thanks for your input.

Colleen, it’s not a dumb question. Here are the adjustments as posted by Rose on the blog:

Make 2/3 of the recipe for one 9"x2” pan.
Make 1 1/3 of the recipe for two 9"x2” pans.

I think it’s because the original recipe calls for baking in two 9"x1.5” pans.  If you are making one in 9"x2”, you use 2/3 of the recipe.  If you make two 9"x2”, you use 1 1/3 of the recipe.  I tried playing around with this also.  I made the all-occasion downy in a 9x2.  It had a dip in the middle but I may have underbaked it.  Haven’t had a chance to try this again.

To add to this mix, 2/3 of Rose’s recipes for her All Occasion Downy Yellow Cake or the White Velvet Butter Cake fit perfectly into two 8 inch b y 1.5 inch round pans when you want a bit smaller cake.

Maybe I have an older version of TCB, but on pg 39 is the All-Occasion Downy Yellow Butter Cake. It’s just the recipe. I will go through the book again and see what I’m missing. Thank you for all of your help.

It does not say anywhere in the Cake Bible that these recipes will scale down, I figured that out on my own. : )

The three base cakes in the wedding cake section of TCB - white, yellow and chocolate - correspond to the recipes towards the front of the book for the White Velvet Cake p 46, the All Occasion Downy Yellow p 39 and the Perfect All-American Chocolate p 54 respectively. They can be scaled every which way you like, using the Rose Factor system. All the way from a 6” round up to sheet cakes 18” x 12”.

It can be a little more problematic to scale other recipes up and down - but those ones were all worked out for us by Rose.

thank you for your help. I did do my first wedding cake last week and she wanted a 10 and 6 so I use the white cake recipe for 2 9” and 2 6” and it worked perfectly. I’m a little new at this rearranging figures so I just have to ask alot of questions and I appreciate everyones help.
