Does anyone make crumbcake with a layer of apples between the cake and the crumbs? I’d like to try this, but not sure how to do the apple layer - just raw spiced up apples, partially cooked spiced up apples, partially cooked apples thickened, as for an apple pie filling, fully cooked thickened apple pie filling?  So many choices, LOL.

I’m talking about a cake base, not a yeasted base.

There is a recipe just like that in The Cake Bible…I make it all the time.  It is my FAVORITE recipe in the book.  The cake is called Sour Cream Coffee Cake.
You place 2/3 of the batter in a springform pan, then a layer of crumb mixture, then thinly sliced apple (One medium apple thinly sliced for a 9” pan) then the remaining 1/3 batter and more crumbs.  It is amazing!

Thanks, Bill. I would never have found this recipe. I looked in the index of the Cake Bible under ‘apple’ last night, but there is nothing listed for “Apple” at all, nothing. So I assumed that there were no recipes similar to what I am looking for in the Cake Bible.

enjoy it.  It was the first recipe I made from the book…it is always a hit.  By the way…search the blog…some people have a problem with the crumbs sinking into the cake…rose now recommends that you put the cake in the oven without the crumbs on top for the first few minutes…take the cake out…sprinkle the crumbs, and then return it to the oven.  I’m not sure exactly how log you bake it w/o the crumbs (10 minutes? 15 minutes? something like that).  It is posted somewhere.  I have had the problem of the crumbs sinking when I bought my new oven…it seems that it was due to the fact that the temperature was off.  That’s been adjusted…and I haven’t tried the cake since the oven has been fixed…but search the blog…there is useful information on this cake.

My biggest complaint about TCB… the index - it could be improved in sooooooooo many ways!

I should follow-up by saying that I don’t have many complaints about the cake bible… just the index and the unsewn pages that Rose has vowed to include in all her future cookbooks.  As for every other aspect of TCB, I give the book an A++++.
