Okay, this is not one of Rose’s recipes, but I had to post it anyway… it’s so rich that I might never make it again.  Hubby just turned 40, and this cake was his request.  It’s what he always orders from The Trellis Restaurant in Williamsburg, Va.  Recipe is from the book Death by Chocolate (by Marcel DeSaulniers - chef and owner of The Trellis).

Patrincia, it looks picture-perfect!!  And yes, what a labor of love, all those different layers.  How far ahead did you start it?  Was your husband suitably impressed and thrilled?  Thanks so much for posting it, it’s very inspiring.

Hi Julie - I started the cake the night before I served it.  I made the ganache and the 2 mousses the night before, made the brownie and cocoa meringue layers the following morning, and put it all together over the course of the afternoon, with lots of rest in the fridge/freezer.

I have one question - just how do you bakers keep your waistline in check?
