How finely should I grate the cheese?

Any tips for a successful outcome?

Can’t imagine that it would make much difference, as long as you don’t have big hunks of cheese that would sink directly to the bottom of the filing.

Thanks Bill! Have you made Rose’s quiche recipe?

I haven’t used Rose’s Quiche recipe.  I use Rose’s Pastry crust recipe (I use the all butter with heavy cream rather than water) and then I use Julia Child’s quiche recipe…but Quiche is Quiche LOL.  I think it’s three eggs, then add milk/cream to equal 1 1/2 cups, salt, pepper, nutmeg.  Other ingredients depend on what’s in the fridge…I actually made a broccoli/cheddar quiche this past saturday.

OH MY GOD…YOU HAVE NO IDEA.  iT IS FLAKY AND DELICIOUS.  THE “HAND METHOD” IN THE PIE AND PASTRY BIBLE IS A LITTLE TIME CONSUMING, BUT THE RESULT IS WELL WORTH THE EFFORT.

I’ve made a couple of Rose’s quiches.  They are very creamy, smooth, and delicious! And easy too, so don’t worry too much Paul!

Well from what I can see one needs to concentrate on the pastry - the rest is easy.

Hi Jeannette - Still assembling the equipment. Ordering fluted tart pans etc online. (Can you believe they don’t sell these in my home town! It is real struggle to find what I need for baking.) You guys are so lucky to have everything at hand.

But I don’t think anything will arrive until the New Year.  I like to have the proper equipment - one less thing to go wrong.

Unfortunately most of what I bake is consumed before the camera appears - it is all Rose’s fault for producing such delicious recipes!

Which is your home town, Paul? My first grandson was born in Nelspruit. They actually lived in Maputo MZ, but the hospital system is such in MZ that my daughter was concerned. She decided to have her first child in South Africa where, as you know, you have excellent health care.

Hi Carolita - Home town is Cape Town - right South on the bottom tip of Africa. We are on the Cape whale coast.
