I just took a look at your website. Beautiful cakes!

Do you by any chance know or know of the “Ace of Cakes” guy on food tv? I believe his bakery is in the San Diego area.

Before I switched to bread and pastry baking professionally, I decorated wedding cakes for a bit, but I just got tired of having to be so detail oriented. I’d rather eat cake than decorate it .

I too would love to have your red velvet cake recipe. It is one of my favorite cakes, but a good recipe for it is hard to come by.

And for some strange reason, I’d been thinking the Ace of Cakes was in Baltimore.  Whatever the location, I think his creations are just awe-inspiring!

Thanks for sharing it on the forum. Does anyone have a Cream Cheese frosting they recommend? I keep trying various recipes and am never quite satisfied. The only one I really enjoy is the filling for Libby’s Pumpkin roll but I’m not sure it would work as an icing/topping.

(I have to confess I find it tiresome when someone posts about how great their recipes are, then requires people to request their recipes individually, rather than simply posting the recipe to begin with. If they don’t want to post them on the internet, they shouldn’t brag about them and share via email. Once a recipe gets shared, it’s fair game. Believe me, I’ve been on the receiving end of more recipes via email than I want or need, so I know it happens despite the original recipe-maker’s wishes. I’m not trying to single out Vreeke, just mentioning a pet peeve. I was a member once on another forum that was totally overwhelmed by a particularly thin-skinned toxic type who simply could not make it through the day without the attention this ploy brought her. She apparently had some ‘special’ recipes that she’d only share via email, but would share mountains of others on the forum without ever having been asked to do so. The whole place eventually imploded, mostly because of childishness and manipulations between members. I’m hoping this forum will be more responsible and adult than that.)

If you read my comments more carefully, you’ll notice I specifically mention that I wasn’t trying to single ANYONE out, just making an observation about a pet peeve of mine. The forum I reference was basically destroyed because people wouldn’t or couldn’t accept criticism of any sort, no matter how minor, or allow others to express varying opinions, without flying into temper tantrums, rants and name calling, on the forum and via PM. Pretty sad end to what had been a useful resource.

If you’ve got a problem with something I’ve posted, send me a PM. It wasn’t my intentions, whatever anyone might be willing to assume without evidence. It’s hard to express one’s thoughts with nothing but text, and easy to make faulty assumptions.

As we all know, other people have their own opinions, and will cling to them, regardless. It’s pretty much the main reason holiday family gatherings are so stressful.

Editing to add: Cutting and pasting text shouldn’t be a challenge for anyone posting on a forum.  If it is, they should post a question on the technical support board. I’m reasonably certain the members of this forum are adult enough to provide assistance courteously.
