CAKE MEASUREMENTS

HOLA! HI!
I RECENTLY BOUGHT THE CAKE BIBLE AND THE HEAVENLY CAKES BOOK. I AM IN LOVE WITH THEM! BUT I HAVE SOME QUESTIONS.

CAN I USE THE EGGS CALLED IN THE RECIPE OR DO I HAVE TO MEASURE THEM IN OZ.? ALSO, DO I HAVE TO MEASURE, AND WEIGHT ALL THE INGREDIENTS?
LASTLY, HOW CAN I MAKE THE RECIPE SO IT WILL FIT A PAN THAT IS 3 INCHES TALL ( USUALLY 10 X 3, 8 X 3, AND SO ON…)?

usually the number of eggs called for in the recipe is close enough to the correct number of eggs…as long as they are “large eggs” as sized in the US.  If not, you should measure or weigh them.  The correct amount of each ingredient is crucial to cake baking.  You can measure in cups or weigh the ingredients.  If you are measuring flour in cups, be sure that you sift it into the cup.  there are instructions for this in the cake bible.

With respect to the 3” pans.  Rose says that her cakes don’t perform well in 3” pans.  Use the pan size called for in the recipe!

I agree with Bill about the pan size. However, I do want to say that I have successfully baked the all american chocolate cake in a 5X3 inch cake pan. I adjustied the oven temp to 325F and watched the cake carefully.

DO YOU MEAN THAT IT IS NOT NECESSARY TO BUY THE SCALE. IF IT IS WHICH ONE DO YOU RECOMMEND? ANOTHER QUESTION IS, WHERE CAN I BUY THE MEASURING DEVICE FROM WOODY WOLSTON AND OR ROSE? DO I HAVE TO MAKE IT? ALSO, IF I WANT TO BAKE A LARGE CAKE HOW DO I KNOW HOW MANY TIMES DO I HAVE TO DOUBLE IT SIZE (FOR EXAMPLE A 12 X 2, 10X 2,8 X 2 AND 6 X 2)
AGAIN, I AM A SELF LEARNER AND I JUST WANT TO CREATE TASTY AND QUALITY CAKES.

Information regarding larger cakes is in the cake bible. I think the scale that Rose recommends is the “My Weigh”...I think.  Search the blog…you will find the info.  I have a Salter and it was rather inexpensive…and works fine. A scale isn’t necessary…but will make your life much easier if you plan to bake a lot.

Cupcakes…AHHHHHHHHHHH!  I’ve had a lot of stress over cupcakes LOL.  I’m heading out but will send you cupcake info in the near future (hopefully tomorrow)

There is a cupcake section in Rose’s Heavenly Cakes…give that a look-see.
